We ended up booking a place in Alpine, Wyoming for tomorrow night. Flying Saddle Resort with a restaurant that has Black Angus Beef. Had to mention that, as Mom is really excited about it. It's also right on the Snake River. http://www.flyingsaddleresort.com/
For Sunday and Monday night I booked The Lexington at Jackson Hole. We figured that we would need to bite the bullet and just get something in Jackson. With my Expedia points I was able to get a really great place and literally half the price. We only booked 2 days and hopefully this will get us there and enough time to see some of the Grand Tetons.

We checked out, went into Chubbuck to eat. I wanted breakfast even though it was almost noon. We went to Big Bear Diner as they serve breakfast, lunch and dinner all day.
Afterwards, we went to downtown Pocatello. The pictures below show some things that stood out for me downtown.
We also noticed that there was a University here. Idaho State University. We found the Natural History Museum and they were doing 2 different exhibits. Dinosaurs and Fire. It was pretty cool to see both sides. Huge fossils of animals found in the Ice Age.

We headed back to Idaho Falls to our hotel. We got to Idaho Falls about 4pm. We are so happy to stay here as they have kitchens, a small store downstairs, workout area and laundry! We checked in, and got some clothes together to do some laundry. We ate in our room - cheese, chips, apples, grapes, cucumber, hummus and wine! That's a pretty good dinner.
